<p>Kassandra is a graduating student from Rich High School with a current GPA of 3.99. She is a member of the National Honor Society and has been chosen as this year&#8217;s Valedictorian.  She currently serves as the Drill Team Assistant Mistress.</p>
<p>In addition to her dedication to the Drill Team, she has attended college courses through Utah State University and received an Associate Degree in Science before graduating from high school.</p>
<p>Besides her scholastic work, she actively serves her community. She donated many hours to cleaning highways, helping Globus Relief provide medical supplies to third-world countries, helping provide Christmas gifts to under-privileged  children and many hours mentoring an elementary student as part of the Youth and Families with Promise program.</p>
<p>She plans to attend Weber State University in pursuit of  a degree in Radiologic Science, then continuing with a graduate degree in Diagnostic Medical Sonography.</p>

<p>Holly is currently a student at South Sevier High School. She has maintained a GPA of 3.92 and is a recipient of the Ameritus Knowledge Award. She also participates as a member of the school drama group where she has earned Superior Rating for Drama Competition.</p>
<p>She has volunteered many hours utilizing her talents in painting sets for local school plays as well as for community plays. She serves her community in many ways. Her involvement in a mixture of extra-curricular activities gave her an opportunity to serve and influence many people. She enjoys the opportunity to brighten the lives of community members in the assisted living facilities with artistic performances.</p>
<p>She plans to attend Snow College. There she plans to obtain a degree in Fine Arts with a teaching certificate. Her choice of attending Snow College will increase the scholarship by $750 for a total value of $1250.</p>

<p>Sara is a graduating student of North Sanpete High School and is the top student in the school. She has a GPA of 4.0. She is a member of the National Honor Society.</p>
<p>Sara enjoys many volunteer serving opportunities. She enjoys working with the public library reading program. Besides her involvement in serving the community, she spends many hours a week working as an Intern at the Mt. Pleasant Elementary School. This opportunity has given her great joy and satisfaction to see the children learn and grow. Working with the children has inspired her to become a teacher.</p>
<p>She plans to attend Snow College in pursuit of an elementary education degree. Her choice of attending Snow College will increase the scholarship by $750 for a total value of $1250.</p>

<p>Emma is a graduating senior at Wasatch Academy. She has a GPA of 4.0. She has participated on the school&#8217;s robotics team and dance company. She is a member of the National Honors Society and student body council.</p>
<p>Emma is equally adept in the arts as well as the sciences. She enjoys art, dance, theatre, singing, creative writing and history. She loves to learn and spends her free time writing, reading and drawing. Emma finds great satisfaction serving others. As the Co-Organizer of Wasatch Academy&#8217;s annual Community Service Day, she led her classmates in serving the community.</p>
<p>She will be attending Southern Utah University this fall with an emphasis in fine art or performing art.</p>

<p>KyLee is a senior at Dugway High School and has maintained a grade point average of 3.96. She is a member of the National Honor Society. She serves as the student body Vice President. Not only will she graduate with her high school diploma but has taken many college courses such as English, Biology, Psychology, Sociology and Political Science.</p>
<p>KyLee is a member of the volleyball, basketball and Track &amp; Field teams. She served her teammates as the captain of both the volleyball and basketball teams. She received Academic All-State for volleyball, basketball and Track &amp; Field. She has attended many leadership conferences for the past several years including the prestigious Utah Girl&#8217;s State and Freedom Academy. She also volunteers many hours to mentor elementary students.</p>
<p>She will pursue a degree at Snow College in Behavioral Science with an emphasis in Sociology. She enjoys working with children and would like to help them overcome emotional, mental and physical trauma. Her choice of attending Snow College will increase her scholarship by $750 for a total value of $1250.</p>

<p>Katie is a senior at Dugway High School and has maintained a grade point average of 3.88. She has also completed many college courses. She is a member of the National Honor Society and serves as the president for that organization. She also is the Student Body President.</p>
<p>Besides the many leadership positions she has held, she is an accomplished musician. She plays the clarinet in the school&#8217;s state championship band. Katie is a member of the All-State Orchestra as first chair and section leader.</p>
<p>She will pursue a degree at Utah State University. She loves music and desires to use her talents as a speech and audiology health care professional. She plans to get a graduate degree in speech and audiology.</p>

<h4>Recipe</h4>
<p><strong>BBQ MEATBALLS</strong><br />
Meat Mixture :<br />
1 &frac12; lb. hamburger <br />
2 eggs <br />
&frac34; cup oatmeal <br />
1 cup  canned milk (evaporated) <br />
1 tsp. salt <br />
&frac14; tsp. pepper</p>
<p>Sauce: <br />
4 T. Worcestershire sauce<br />
 2 T. sugar <br />
&frac14; cup water <br />
3 T. vinegar <br />
1 cup catsup <br />
1 onion, coarsely chopped <br />
1 green pepper, coarsely chopped (optional)</p>
<p>Mix meat mixture altogether.  Make into walnut-sized balls and place in casserole dish (9×13). Put in 400&deg; oven for 10 minutes or until brown. Mix sauce and pour over meatballs. Reduce oven to 350&deg; and cook for 20 -30 minutes or until red disappears.</p>
<hr />
<p><strong>OVEN-BAKED BROWN RICE</strong><br />
(I could never cook fluffy brown rice until I found this recipe.)</p>
<p>1 &frac12; cups long, medium, or short-grain brown rice <br />
2 &#8531; cups water <br />
2 tsp. butter or vegetable oil <br />
&frac12; tsp. salt</p>
<ol>
<li>Adjust the oven rack to middle position; heat oven to 375°. Spread rice in 8-inch square baking dish.</li>
<li>Bring water and butter or oil to boil, covered in medium saucepan over high heat; once boiling, immediately stir in salt and pour water over rice. ( I actually put the butter and salt on top of the rice in the casserole dish. I use a teapot to boil the water. Once boiling I measure it out and pour over the rice, butter, salt and stir. This way I don’t lose any water to steam.) Cover baking dish tightly with doubled layer of foil. Bake rice 1 hour, until tender.</li>
<li>Remove baking dish from oven and uncover. Fluff rice with dinner fork, then cover dish with clean kitchen towel; let rice stand 5 minutes. Uncover and let rice stand 5 minutes longer; serve immediately.</li>
</ol>

<p><strong>SPINACH SALAD WITH POPPY SEED VINAIGRETTE</strong><br />
Cleaned, trimmed, dry spinach<br />
Add salad toppings as desired such as:<br />
Green apple slices<br />
Orange sections<br />
Strawberry slices<br />
Pecans, walnuts, or almonds<br />
Raisins or dried cranberries<br />
Sunflower seeds<br />
Feta cheese<br />
Toss ingredients together and serve with poppy seed vinaigrette</p>
<p>Poppy Seed Vinaigrette:<br />
&#8531; cup canola or olive oil<br />
&#8531; cup rice, balsamic, raspberry vinegar<br />
&#8531; cup honey or real maple syrup<br />
1 tablespoon Dijon mustard<br />
1 teaspoon poppy seeds<br />
Whisk ingredients together or shake in a jar and toss with salad. A little bit of this dressing goes a long way.</p>

<p><strong>OVEN-ROASTED SPRING AND SUMMER VEGETABLES</strong><br />
12 asparagus spears, trimmed<br />
1 medium zucchini, cut into diagonal slices<br />
1 medium yellow crookneck squash, cut into diagonal slices<br />
1 bell pepper, cut into thin strips<br />
2-4 teaspoons olive oil<br />
2 tbls chopped fresh parsley<br />
2 tbls chopped fresh cilantro<br />
2 tbls chopped fresh basil (or 1 tsp dried)<br />
1 small garlic clove, minced</p>
<p>Preheat oven to 425&deg;. Combine asparagus, zucchini, squash, bell pepper, and olive oil in a resealable bag and toss to evenly coat the vegetables with oil. Spray a large baking sheet with cooking spray and dump vegetables from bag onto baking sheet in a single layer.  Roast for 20 minutes or until tender and lightly browned, stirring after the first 10 minutes.  Meanwhile combine parsley, cilantro, basil and garlic in a small bowl.  After vegetables come out of oven, sprinkle them with herb mixture.  Season with salt and pepper to taste. </p>

<p><strong>SMOOTHIE</strong><br />
Frozen strawberries<br />
Frozen mango chunks<br />
8 oz. vanilla yogurt<br />
1 banana<br />
3 or 4 cups of milk</p>
<p>Blend all ingredients together until smooth (add more milk as needed).</p>

<p>It’s the time of year when high school seniors are thinking about the next great step in their lives—college. They are thinking about where to go, where to live, and what classes to take. College is a wonderful experience but it can get expensive in a hurry. Application fees, tuition, student fees, housing, books… the list goes on and on.</p>
<p>We are committed to helping the students in our service areas achieve their goal of a college education. For the past twelve years, CentraCom Interactive has offered scholarships to eligible high school seniors planning to attend college. This has been a great opportunity not only to serve our community, but to get to know future leaders of America.</p>
<p>We are pleased to announce that we have again partnered with Snow College to bring even larger scholarship value. We will be giving away six scholarships with an initial value of $500. If the recipient chooses to attend Snow College, the scholarship from CentraCom will be $1000 and Snow College will match $250 raising the value to $1250. The scholarship may be used for any college expense, such as tuition, books, housing, etc.</p>

<p>For the spring of 2012, sun outages are expected between February 29th and March 8th.</p>
<p>Sun outages are a normal consequence of satellite communications. Our programmers send us their signal via a satellite downlink. The interference is caused when the sun is in a direct line with a communication satellite. The sun&#8217;s radiation overwhelms the satellite signal.<br />
Being that we use multiple satellites to receive programming, different channels will go off at different times in the morning and afternoon each day during this time period.</p>
<p>Related disruptions in service typically last about 15 minutes per day, per satellite. Some symptoms of sun outages include:<br />

<h4>Recipe</h4>
<p><strong>RANCH CHICKEN</strong><br />
6 boneless, skinless chicken breasts<br />
⅔ cup Ranch dressing<br />
lemon pepper<br />
garlic pepper<br />
parmesan cheese, finely grated (about ½ a wedge)<br />
Preheat oven to 350°</p>
<ol>
<li>Rinse, trim and pat dry chicken breasts.</li>
<li>Cover a cookie sheet with aluminum foil.</li>
<li>Pour ⅔ cup Ranch dressing into a medium bowl.</li>
<li>Dip each chicken breast in Ranch dressing.</li>
<li>Generously sprinkle both sides of each chicken breast with lemon pepper, garlic salt, and parmesan cheese.</li>
<li>Bake ate 350° for about 40 minutes until no pink remains.</li>
</ol>

<p><strong>MASHED GARLIC CAULIFLOWER POTATOES</strong><br />
1 head of cauliflower,<br />
2 &#8211; 4 potatoes<br />
1 bulb garlic<br />
2 &#8211; 6 T. milk or cream<br />
3 T. butters<br />
½ &#8211; ¾ tsp. salt<br />
¼ &#8211; ½ tsp. black pepper</p>
<p>Bring a large pot of water to a boil. While waiting for the water to boil, wash cauliflower and cut/break into small pieces. Scrub, peel, and cube potates. Peel each clove of garlic in the bulb of garlic. Smash each clove of garlic with the flat side of a chef’s knife to make removing the paper easier.</p>
<p>Toss vegetables and garlic in boiling water. When vegetables are soft, remove from water and drain well. Add butter and mash with potato masher (a fork will work or a pastry blender). Add milk or cream until you reach the desired consistency. If needed, briefly blend with an electric hand mixer to ensure all garlic cloves are mashed and well incorporated. Season with salt and pepper. Garnish with chopped chives if desired and serve</p>

<p><strong>BRUSSEL SPROUTS</strong><br />
Place frozen Brussel sprouts in microwave steamer with a small amount of water (½ cup). Microwave for 7 minutes. Serve.</p>
<p>Serving Options:<br />
Serve with salt and pepper to taste.<br />
Serve drizzled with a butter sauce.<br />
Serve with a small amount of Miracle Whip or Ranch dressing for dipping</p>

<p><strong>LEMON SALAD DRESSING</strong><br />
¼ cup olive oil<br />
1½ T. lemon juice<br />
¼ &#8211; ½ tsp. salt<br />
¼ tsp. pepper</p>
<p>Place all ingredients in a small jar. Tighten lid and shake well. Drizzle over salad greens.</p>

<p><strong>PINEAPPLE UPSIDE DOWN CAKE</strong><br />
4 eggs<br />
1 can of pineapple slices<br />
1½ cups sugar<br />
2 cups flour<br />
maraschino cherries opt.<br />
½ cube butter<br />
½ cup brown sugar</p>
<ol>
<li>Generously grease a 9&#215;13 pan. (Shortening works really well for this.)</li>
<li>Melt butter, stir in brown sugar, spread in bottom of 9&#215;13 pan.</li>
<li>Arrange pineapple slices (save juice) on top of brown sugar mixture. Place one maraschino cherry in center of each pineapple ring.</li>
<li>Separate egg whites and yolks.</li>
<li>In a large mixing bowl, whip egg whites until stiff peaks form.</li>
<li>In a separate mixing bowl beat egg yolks with pineapple juice from the canned pineapple slices.</li>
<li>Add sugar and flour to egg yolk mixture. Mix well.</li>
<li>Carefully slide the egg whites into the batter. Slowly and very gently fold the egg whites into the batter. Turn the bowl and 1/8 to ¼ turn after each fold. Continue until the egg whites are incorporated without any large pieces of egg white remaining.</li>
<li>Bake at 350° for 45 minutes.</li>
<li>Remove from oven and allow to cool for 5 minutes.</li>
<li>Invert onto serving tray and let cake fall from pan.</li>
<li>Serve and enjoy!</li>
