<h4>Recipe</h4>
<p><strong>RANCH CHICKEN</strong><br />
6 boneless, skinless chicken breasts<br />
⅔ cup Ranch dressing<br />
lemon pepper<br />
garlic pepper<br />
parmesan cheese, finely grated (about ½ a wedge)<br />
Preheat oven to 350°</p>
<ol>
<li>Rinse, trim and pat dry chicken breasts.</li>
<li>Cover a cookie sheet with aluminum foil.</li>
<li>Pour ⅔ cup Ranch dressing into a medium bowl.</li>
<li>Dip each chicken breast in Ranch dressing.</li>
<li>Generously sprinkle both sides of each chicken breast with lemon pepper, garlic salt, and parmesan cheese.</li>
<li>Bake ate 350° for about 40 minutes until no pink remains.</li>
</ol>

<p><strong>MASHED GARLIC CAULIFLOWER POTATOES</strong><br />
1 head of cauliflower,<br />
2 &#8211; 4 potatoes<br />
1 bulb garlic<br />
2 &#8211; 6 T. milk or cream<br />
3 T. butters<br />
½ &#8211; ¾ tsp. salt<br />
¼ &#8211; ½ tsp. black pepper</p>
<p>Bring a large pot of water to a boil. While waiting for the water to boil, wash cauliflower and cut/break into small pieces. Scrub, peel, and cube potates. Peel each clove of garlic in the bulb of garlic. Smash each clove of garlic with the flat side of a chef’s knife to make removing the paper easier.</p>
<p>Toss vegetables and garlic in boiling water. When vegetables are soft, remove from water and drain well. Add butter and mash with potato masher (a fork will work or a pastry blender). Add milk or cream until you reach the desired consistency. If needed, briefly blend with an electric hand mixer to ensure all garlic cloves are mashed and well incorporated. Season with salt and pepper. Garnish with chopped chives if desired and serve</p>

<p><strong>BRUSSEL SPROUTS</strong><br />
Place frozen Brussel sprouts in microwave steamer with a small amount of water (½ cup). Microwave for 7 minutes. Serve.</p>
<p>Serving Options:<br />
Serve with salt and pepper to taste.<br />
Serve drizzled with a butter sauce.<br />
Serve with a small amount of Miracle Whip or Ranch dressing for dipping</p>
<hr />
<p><strong>LEMON SALAD DRESSING</strong><br />
¼ cup olive oil<br />
1½ T. lemon juice<br />
¼ &#8211; ½ tsp. salt<br />
¼ tsp. pepper</p>
<p>Place all ingredients in a small jar. Tighten lid and shake well. Drizzle over salad greens.</p>

<p><strong>PINEAPPLE UPSIDE DOWN CAKE</strong><br />
4 eggs<br />
1 can of pineapple slices<br />
1½ cups sugar<br />
2 cups flour<br />
maraschino cherries opt.<br />
½ cube butter<br />
½ cup brown sugar</p>
<ol>
<li>Generously grease a 9&#215;13 pan. (Shortening works really well for this.)</li>
<li>Melt butter, stir in brown sugar, spread in bottom of 9&#215;13 pan.</li>
<li>Arrange pineapple slices (save juice) on top of brown sugar mixture. Place one maraschino cherry in center of each pineapple ring.</li>
<li>Separate egg whites and yolks.</li>
<li>In a large mixing bowl, whip egg whites until stiff peaks form.</li>
<li>In a separate mixing bowl beat egg yolks with pineapple juice from the canned pineapple slices.</li>
<li>Add sugar and flour to egg yolk mixture. Mix well.</li>
<li>Carefully slide the egg whites into the batter. Slowly and very gently fold the egg whites into the batter. Turn the bowl and 1/8 to ¼ turn after each fold. Continue until the egg whites are incorporated without any large pieces of egg white remaining.</li>
<li>Bake at 350° for 45 minutes.</li>
<li>Remove from oven and allow to cool for 5 minutes.</li>
<li>Invert onto serving tray and let cake fall from pan.</li>
<li>Serve and enjoy!</li>

Due to the increasing size of the video-on-demand library, CentraCom has just launched a completely new web site for <a href="http://www.local10.tv">Local Channel 10</a>. The new web site will make it even easier for viewers to get quick access to all of the live events and archived events available from <a href="http://www.local10.tv">Local Channel 10</a>. This service is free for all CentraCom customers.</p>
<p>There are three main sections to look at. The first is the &#8220;Archive&#8221;. This section lists all of the programs available on <a href="http://www.local10.tv">local10.tv</a>. Visitors will be able narrow-down the list by using the &#8220;Find&#8221; feature at the top of the list. It is easy to filter the programs by type, school, sport, etc. The second section is &#8220;Schedule&#8221;. This section allows viewers to see what events are coming up and how they will be able to watch (whether live on Cable TV Chanel 10 or streaming live on the web site). The third section is &#8220;Live&#8221;. In this area, visitors will get access to events that are available live.</p>
<p>CentraCom Local Channel 10 is the only place you can watch the events that are happening in our area. We cover the local high school events: North Sanpete, Juab, Richfield, South Sevier, Manti, North Sevier and Gunnison as well as Snow College. We are soon expanding to Wasatch Academy, Delta, Millard and Payson. We produce local shows such as: Kate&#8217;s Kitchen, Channel 10 Garden Show and more to come. We also have many community events. With the help of the schools and local residents, the video-on-demand library is dramatically increasing. 		</p><p>The Young Artists Chamber Players and pianist <a href="http://www.marshallmcdonaldmusic.com/" target="_blank">Marshall McDonald</a> will once again visit Fairview to perform a Christmas Concert. The concert is provided Free to the community. The Jordan High School Chamber Choir will also be part of the concert. These talented groups will surely dazzle and inspire the audience as we prepare to celebrate the season. Admission is Free and will be held on Tuesday, December 6 at 7:00 PM in the Fairview Peterson Dance Hall (51 S. State Street). Families, including all children are welcome. The organizing committee is asking audience members to bring food or cash donations for the local food bank to help struggling families in our area. Tell your family, friends and neighbors about this wonderful event.</p>
<p>Earlier this year, the group performed a spring concert. Below you can see the performance. Note: Marshall McDonald&#8217;s performance is near the end of the video.</p>

<h4>Recipe</h4>
<p><strong>BEEF POT PIE</strong><br />
1 &frac12; lb. ground beef<br />
&frac14; c. chopped onion<br />
&frac12; c. catsup<br />
1 tsp. salt<br />
&frac14; tsp. basil<br />
1 clove garlic, chopped</p>
<p>Mix in blender:<br />
2 eggs<br />
&frac34; c. flour<br />
&frac34; c. milk<br />
&frac34; tsp. salt</p>
<p>Brown first six ingredients together. Turn oven to 425&deg;. Put 2 T. butter in 10&#8243; pie pan. Place in hot oven until melted and bubbly. Mix eggs, flour, milk and salt in blender. Pour batter into hot butter in pie pan. Gently spoon beef filling into center of batter. Bake at 425&deg; for 25 min.</p>

<p><strong>OSCAR SALAD</strong><br />
Salad greens (romaine, leaf lettuce, head lettuce, spinach, etc.)<br />
Cold Left over vegetables<br />
Grated cheese (Swiss, Mozzarella, Monterey Jack, etc.)<br />
Something crunchy (croutons, nuts, Chinese noodles, etc.)</p>
<p>Tear or chop salad greens and place in bowl. Drizzle olive oil and stir until coated. Season with salt and pepper to taste. Drizzle with basalmic vinegar stir and taste. Add more if needed.</p>
<p>Stir in cold veges, grated cheese, and crunchy stuff. Serve and enjoy!</p>

<p><strong>PUMPKIN CRUNCH</strong><br />
1 large can pumpkin<br />
1 12 oz. can evaporated milk<br />
3 eggs, beaten<br />
1 cup sugar<br />
2 tsp. pumpkin pie spice</p>
<p>Mix and pour into 9 x 13 greased pan.</p>
<p>In a bowl, stir together 1 yellow cake mix and 1 cube (&frac12; cup) butter till crumbly. A pastry blender or electric hand mixer is helpful. Bake at 350&deg; for 50 minutes.</p>
<p>Serve with whip cream or vanilla ice cream.</p>
