Kate’s Kitchen: Onion Chicken

Recipe

ONION CHICKEN
4-5 chicken breasts
1 pint of half and half
1 package onion soup mix
2 tomatoes

  1. Lay chicken breast in 9×13 pan.
  2. Pour half and half over the chicken
  3. Sprinkle soup mix over the chicken
  4. Cover with foil and bake for 15 minutes. Then remove foil and bake uncover until done (about 20 minutes.)

CHICKEN RICE
2 cups rice
4 cups water
4 bullion cubes

  1. Add all ingredients to stove top pan
  2. Cook on high until boiling, then reduce heat to low and let simmer until done (about 20 minutes). Do not stir until water has been aborbed and rice is soft.

CRAISIN-SPINACH SALAD

SALAD
1 bunch spinach
1 small head leaf lettuce
1 ½ cup craisins
1 lg can chow mein noodles
1 cucumber, peeled and diced
2 small cans (or 1 large) mandarin oranges, drained
DRESSING
&frac12 cup oil
&frac13 cup sugar
&frac12 tsp. dry mustard
&frac12 tsp. salt
3 T. vinegar

 

  1. Add salad ingredient together and toss to mix.
  2. Make dressing: Mix all dressing all ingredients in a blender. Add optional poppy seeds after blending.
  3. Pour dressing over salad and mix. Serve immediately.
